Tips:

• Use a sharp toothless knife to slice your fruit cake. Very cold, it will cut better, but it is at room temperature that it should be served.
• Your cake will go well with a port, ice wine or ice cider. It can also be brushed with rum just before serving.
• Although the fruit cake is traditionally served with holiday meals, it is a good companion after your winter sports outings.
• The cake will keep for several months in the fridge. Its taste and texture improve with age. However, depending on the storage conditions, it may dry out a bit: you just need to brush it with a little rum to restore its softness.
